Ingredients

Amounts are for 4 household servings. Sodium model: 1/2 tsp table salt per serving (not added as an ingredient line).

  • 1 1/3 lb ground turkey
  • 2/3 can black beans, drained and rinsed (about 10–11 oz)
  • 2/3 can cannellini beans, drained and rinsed (about 10–11 oz)
  • 1 1/3 cans diced tomatoes, (14.5 oz each can)
  • 1 1/3 small onion, diced
  • 1/3 yellow bell pepper, diced
  • 2 2/3 cloves garlic, minced
  • 1 1/3 tbsp avocado oil
  • chili powder, to taste
  • cumin, to taste
  • salt and black pepper, to taste

Grab first: Canned black beans and cannellini (use partial cans or freeze remainder), canned diced tomatoes, ground turkey

Directions

  1. Heat oil in a pot over medium-high. Brown turkey with onion, yellow pepper, salt, and pepper.
  2. Add garlic, chili powder, and cumin; cook 30 seconds.
  3. Stir in diced tomatoes, black beans, and cannellini beans. Simmer 12–15 minutes.
  4. Taste, adjust seasoning, and serve.
