Ingredients

Amounts are for 4 household servings. Sodium model: 1/2 tsp table salt per serving (not added as an ingredient line).

  • 1.33 to 1.67 lb pork tenderloin
  • 2/3 head green cabbage, shredded
  • 1 1/3 apple, sliced
  • 1 1/3 onion, chopped
  • 1 1/3 tbsp avocado oil
  • 2/3 lime
  • dried thyme, to taste
  • salt and black pepper, to taste

Grab first: Bagged shredded cabbage, pre-trimmed pork tenderloin

Directions

  1. Heat oven to 400°F. Season tenderloin with salt, pepper, and thyme.
  2. Heat oil in an oven-safe skillet; sear tenderloin on all sides.
  3. Add cabbage, apple, and onion around the pork; squeeze lime over the pan.
  4. Transfer to oven 12–15 minutes until pork is cooked through.
  5. Rest, slice, and serve over the cabbage mix.
