Ingredients

Amounts are for 4 household servings. Sodium model: 1/2 tsp table salt per serving (not added as an ingredient line).

  • 1 1/3 lb pork loin, cut into 3/4-inch medallions
  • 1 1/3 lb green beans, trimmed
  • 4 cloves garlic, minced
  • 1 1/3 tbsp olive oil
  • 2/3 tsp dried thyme
  • salt, to taste
  • pepper, to taste

Grab first: bagged trimmed green beans, boneless pork loin

Directions

  1. Pat pork dry. Season with salt, pepper, and thyme.
  2. Heat oil in a large skillet over medium-high. Sear pork medallions 3 to 4 minutes per side until cooked through (145 F). Transfer to a plate and tent loosely.
  3. Add green beans and a splash of water to the skillet. Cover and cook 5 to 7 minutes until tender-crisp.
  4. Stir in garlic for 30 to 60 seconds. Return pork and juices to the pan to warm. Serve pork with the beans.
